Simple explanation
The short answer
With blanquette de veau, chicken in cream or morel sauce, choose a broad, textured white Sancerre from a riper year, or a concentrated selection cuvée. A light, very lean wine will taste thin beside the sauce.
- 01Match weight with weight: a riper vintage or a concentrated cuvée.
- 02The wine's acidity keeps cream sauces from feeling heavy.
- 03Mushrooms, especially morels, love an older white Sancerre.
Go deeper
Why it works
Blanquette de veau, veal gently poached and finished in a sauce of cream, egg yolk and lemon, is mild but rich. Chicken with cream and morels is richer still, with an earthy depth. These dishes are usually paired with Chardonnay, but a full white Sancerre is an interesting alternative because its higher acidity cuts the cream.
Look for wines that growers associate with breadth and texture: the terres blanches slopes of Chavignol, and selection cuvées made in a more concentrated style. A solar year adds the ripeness and body that a cream sauce needs.
Bottles to open
Which Sancerre to pour
Choose a riper year such as 2018, 2019 and 2022, or 2015. A bottle with five or more years of age gains the savoury depth that suits morels.
- White · Selection cuvéeAlphonse Mellot Edmond
The house's more concentrated, cellar-minded register, for blanquette.
- White · Selection cuvéeHenri Bourgeois Jadis
A concentrated cuvée with some age, for chicken with morels.
- White · Named-site bottlingPascal Cotat Les Monts Damnés
A steep Chavignol marl slope with breadth to meet cream sauces.
