Simple explanation
The short answer
Open a dry Sancerre rosé with tomato salads, ratatouille and grilled vegetables. Tomatoes are acidic, and the rosé's freshness and red fruit match them. A ripe white Sancerre is the alternative when goat cheese or herbs lead the dish.
- 01Tomatoes need an acidic wine; rosé and white Sancerre both have it.
- 02Grilled, smoky vegetables: rosé, or a ripe flint white.
- 03Basil, thyme and olive oil all suit both styles.

Why it works
Raw tomatoes are sharp and juicy, and they make soft, low-acid wines taste flat. A dry rosé made from Pinot Noir has the acidity to match and a gentle red-fruit flavour that suits ripe tomatoes and peppers. Ratatouille and grilled vegetables add sweetness and a little smoke, which a ripe rosé or white handles well.
When goat cheese is involved, such as a tomato and crottin tart or courgettes stuffed with goat cheese and herbs, white Sancerre becomes the first choice again.

Which Sancerre to pour
Rosé is best young: drink the most recent good year, such as 2023 or 2024. For white, a ripe year such as 2022 suits grilled vegetables, and a fresher 2021 suits raw tomatoes and herbs.
