Simple explanation
The short answer
Pick an aromatic, bright white Sancerre. Its citrus and green notes echo lime and fresh herbs, and its acidity stands up to fish sauce and sour dressings. With hot chilli, choose the ripest, fruitiest wine you have.
- 01Fresh herbs and lime are the bridge to the wine.
- 02Moderate chilli; heat makes alcohol taste stronger and fruit taste thinner.
- 03A touch of sweetness in the dish is easier with a riper vintage.

Why it works
Many of the aromas used to describe Sauvignon Blanc, such as lime, cut grass, green herbs and passion fruit, also appear in Vietnamese and Thai cooking. Summer rolls full of mint and coriander, a green papaya salad with lime and fish sauce, or a larb of minced pork with toasted rice all meet the wine on common ground.
Chilli is the limit. Strong heat exaggerates alcohol and bitterness and strips the fruit from a dry wine. Keep dishes medium-hot, or serve the chilli on the side. Dishes with palm sugar or a sweet dipping sauce are easier with a riper vintage.

Which Sancerre to pour
Fresh 2021 and 2024 wines suit herb-led, sour dishes. For sweeter sauces or more heat, choose a riper 2022 or 2023.
